Franceinfo Culture: How did the idea for these tasting guides offered in Parisian establishments came to you?
Vuthea Lim: With my partner Laetitia Pailloux, we had opened a coffee shop for two years in the Marais. Consequently, We closed : interview “our pleasure introduce it To launch this new concept, the idea being to make known places and to bring people there.

We realized that by offering tasting products little known by the French. in this case Brazilian products, this made people want to test them and it immediately created a moment of conviviality between consumers and the partner. We then had the idea of launching this concept by offering “restaurateurs-explorers” to make themselves known.

Each illustrated book offers secret or essential addresses, chosen for their ability to surprise and delight the palaces. How was the selection made?
Being in the middle of the food. via our coffee shop, we surveyed our knowledge and we had a very positive return. Once we have seen that the interest was there. we have listed the themes that we loved and which seemed relevant to us: pastry (I have a big affinity with this theme!), Kitchen of the : interview “our pleasure introduce world, vegan, coffee shop & tea rooms as well as wines.

With our team – made up of the two founders. two partners (the illustrator who makes the drawings and the video photographer), we walked in Paris to find the addresses. We selected those that seemed to us by looking at their opinions and notes on Google. We tested them before soliciting them to ask them if they wanted to be part of our themes.

In contrast to the proposals of influencers on social networks. Additionally, we were limited to 20 addresses: we did not want the quantity, nor that it was ephemeral. The selection is made for a period of one year. to promote our partners, enhance their innovations, their work and their know-how. And it’s a free partnership.

How was each tasting chosen?
We talk about it with professionals to make sure to offer. in each book, a variety of products to taste that makes people want to move. Each partner is asked its flagship product, the one who characterizes it to ensure that there are no duplicates.

What happens if the product is no longer available?
The product must be sustainable, that it illustrates who they are. If the latter is no longer available. for example, following a stock shortage or if it is exhausted during the day, the partner must offer another pastry equivalent to tasting to prevent the consumer from being disappointed.

How long is each edition valid?
Each edition has a validity date indicated in the book. For the Pastry shopit was until February 28, 2026, for the Vegan et le Coffee shopuntil July 31, 2026.

When we had our coffee shop. we were registered with Food Tours: guides were visiting several establishments in the same day. With The Food Experiencewe wanted a similar proposal, but adapted to the pace of each. In some Parisian districts, there is no tasting offered in pastry …
Yes, in fact, the number of tastings offered in a neighborhood depends on the themes. For example, in the 15th, there is no pastry in our guide. But the arrondissement appears in editions Coffee shop et Vegan. There is not necessarily an address in each district.

How does it go once to the address chosen?
It is a treasure hunt: the customer is buffer his book. a bit like a collector’s book, at the address visited and the partner gives him the pastry indicated in return.

When people move to live this experience, it’s really to meet a trader. They know the history of the place. the product to be enjoyed in photos and they are inclined to buy something in addition : interview “our pleasure introduce to the tasting to complete the discovery. What are the most unusual discoveries offered by these culinary journeys?
There are quite a few like the Chimney Cake offered by Lolilol in the Marais. It is a specialty of Transylvania, a real discovery. Yes, we are in the process of developing in France and in certain European capitals. We hope to be present at the end of the year in two other cities.
